Nasi Uduk

Todays's lesson is about photographing the breakfast set menu. I chose an Indonesian breakfast, called, Nasi Uduk. I chose this food because I really like Nasi Uduk and for me, it is easy to make even though it takes a long time to cook because it has a lot of condiments. All the condiments on the plate are cook by myself.  

Here is the recipe of Nasi Uduk: 

5 portions (Recipe is from Xander's Kitchen with a slight modification)

Ingredients for Uduk rice:
4 cups of rice
coconut milk to taste (measure like water to cook white rice)
Salt, to taste
2 stalk lemongrass, crushed
1 pandan leaves tied in a knot
5 bay leaves

Ingredients for Orek tempeh:
1 tempeh board, cut into squares
8 pcs shallots, sliced
5 garlic cloves, sliced
10 pieces of red chilies, sliced
1 tomato, sliced
5 pieces of lime leaves
Salt and sugar to taste
2 tbsp sweet soy sauce

Ingredients for fried noodles:
1 pack of egg noodles
1 carrot, shredded
1 bunch of string beans, sliced
75 gr cabbage, shredded
Salt, sugar, pepper, to taste
2 tbsp sweet soy sauce
1 tbsp soy sauce
1/2 tbsp oyster sauce
1/2 tbsp Worcestershire sauce
3 pcs red onion puree
2 garlic cloves puree

Ingredients for sliced ​​omelets:
1 egg
Salt to taste

Ingredients for sambal:
3 cloves shallot
3 cloves garlic
50 gr bird eye chilies
1/2 tsp shrimp paste
Salt, sugar to taste

Direction:
  1. Wash the rice. Pour the rice into the rice cooker, add coconut milk, lemongrass, bay leaves, pandan leaves, and salt to taste. Turn on the rice cooker and wait until cooked. 
  2. Tempe orek: fried tempeh that has been cut and set aside. Saute all spices until fragrant. Add the tempeh, mix well with salt, sugar, sweet soy sauce, if it's too dry, you can add a little water. Cook until the spices are absorbed. Set aside.
  3. Fried noodles: Bring water to a boil plus 1 tablespoon of cooking oil. Put in the egg noodles and cook until the noodles are soft but not mushy. Lift. Drain well. Pour the sweet soy sauce and soy sauce. Stir well. Set aside. Heat oil in a frying pan, saute ground spices until fragrant, add carrot, string beans, cabbage. Pour the noodles, seasoning salt, pepper, oyster sauce, Worcestershire sauce. Stir it. Lift
  4. Sliced ​​omelet: Beat eggs with salt, make a thin omelet in a pan. Cut it into a rectangle shape.
  5. Sambal: Heat the oil. Fry the shallot, garlic, bird eye chilies, and shrimp paste for a while. Lift. Mash all the ingredients using mortar. Season with salt and sugar. 
  6. Presentation: put noodles on the plate. Shape the rice into an oval (like sushi), place it on top of the noodles. Put the omelet on top of the rice. Top with orek tempe and sambal.
